Sprinkle dry yeast into to bowl and let stand until yeast dissolves (five minutes or so). Add salt, sugar, and vinegar to bowl. Mix well.\u003c\/p\u003e\u003cp\u003eSift together soy and gluten flours together. Slowly add to the yeast mixture in the bowl.\u003c\/p\u003e\u003cp\u003eSift whole wheat flour and add it to mixture in bowl. Turn mixture slowly until dough sticks together (and not to sides of bowl). If you have a mixer or food processor that has dough hooks, these help tremendously with the mixing.\u003c\/p\u003e\u003cp\u003eLightly flour a board or other surface. Scoop dough into ball with floured hands and place on surface. Knead for five minutes until dough is smooth and elastic.\u003c\/p\u003e\u003cp\u003ePlace into small bread pan that has been sprayed with nonstick spray. Adjust dough to fit shape of pan (loaf shape). Do not try to touch dough all the way to sides of pan. Cover with slightly dampened towel and set in a warm place (free from drafts) to rise. Let rise for two to three hours until dough has at least doubled in size and reaches top of bread pan.\u003c\/p\u003e\u003cp\u003ePre-heat oven to 325 degrees.\u003c\/p\u003e\u003cp\u003eBake bread in a preheated oven for one hour or until light golden brown.\u003c\/p\u003e\u003cp\u003eThe Scarsdale diet program's bread will be much denser than regular bread.
