About the Author: At a young age, Jennifer Moore observed her mother's presentation of a concern for healthy living. Running up and down the long halls of their old southern home, as treadmills were not the norm at that time, daily exercise proved to be essential for her mom. Following her mother's lead, as Jennifer grew, so did her love of health and wellness. Jennifer chose to study nutrition at Mississippi State University and went on to intern to become a Registered Dietitian at Vanderbilt University Medical Center in Nashville, TN. It was there that the idea of plant based nutrition was first introduced to her. Professionally, Jennifer worked as a clinical dietitian in the specialty of nephrology. Personally, she tried to eat a plant based diet in the non-conducive environment of the deep-south. The more she worked and learned, the more convinced she became of the role that meat based diet practices play chronic disease development. After reviewing numerous studies while completing her Master's Degree through Central Michigan University, Jennifer fully embraced elimination of animal products in her diet. Her professors commented, "Jennifer, the research is overwhelmingly in your favor." She knew she had to teach the truths of this research; the truth that plant based nutrition preserves the health of humans more than any other diet regime.
